The work shop dlc does not have any quests, just parts. Others just add more components to the settlement building. Another allows you to make cages so you can capture creatures that can fight in an arena that you can make. I agree they should have been in the base game, but i do see value in them. Some consider these a waste and think they should have been in the game at release. Then you have all the wasteland workshop stuff. Vault one allows you to make a vault, and gives you vault components to use at other settlements. Automatron has a small quest (i have heard that it is about 5 hours), but it does greatly expand the number of types of robots you will come across, and it allows you to make robots in your settlements. These two are considered the best of the dlc. Far Harbor has what i have heard is a great story. Far Harbor and Nuka world give you two new world spaces to explore.
